  1. Step 1: Preheat the Oven - Begin by preheating your oven to 350°F (175°C). This ensures that your dish cooks evenly and thoroughly.
  2. Step 2: Prepare the Zucchini - Cut the zucchini into 3/4 inch thick slices.
  3. Step 3: Arrange the Zucchini - Place the zucchini slices in a single layer at the bottom of your baking dish.
  4. Step 4: Whisk the Eggs - In a mixing bowl, crack the 6 eggs and whisk them until they are well blended. Add in Spike Seasoning, salt, and fresh-ground pepper to taste.
  5. Step 5: Add Cheese - Stir in the grated Monterey Jack cheese into the egg mixture.
  6. Step 6: Combine and Pour - Pour the egg and cheese mixture over the arranged zucchini slices.
  7. Step 7: Bake - Place your baking dish in the preheated oven and bake for about 25-30 minutes, or until the eggs are set and the top is golden brown.
