  • 1 teaspoon lemon zest (freshly grated for best flavor)
  • 1 small clove garlic (minced or crushed)

Method
 

  1. Start by gathering all your ingredients on the countertop. This will streamline your cooking process and make everything easier.
  2. Place the cottage cheese in your blender or food processor. If you're using 2%, it will still create a creamy dip, but 4% will give it a richer texture.
  3. To the cottage cheese, add the lemon zest and the minced garlic. These two ingredients will provide a zesty kick that makes this dip so special.
  4. Sprinkle in salt and pepper to taste. Start with a little and adjust according to your preference.
  5. Blend all the ingredients together until you achieve a smooth and creamy consistency. You may need to stop and scrape down the sides a few times to ensure everything is well mixed.
  6. Give your dip a taste. If you'd like to incorporate any optional herbs like dill, thyme, or basil, now is the time to add them in and blend again.
  7. Transfer the whipped cottage cheese dip to a serving bowl. You can drizzle a little olive oil on top and garnish with additional herbs if desired. Serve with your favorite veggies, crackers, or bread, and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3-5 days.
  • For a lighter dip, 2% cottage cheese works great!
  • This dip can be made a day in advance, just stir before serving.
