Ingredients
  

  • 2 Tbsp Vegan butter
  • 1 medium Onion Sweet onions work best
  • 1 clove Garlic minced
  • 2 Tbsp Cornstarch or all-purpose flour for thickening
  • 1 cup Vegetable broth homemade is best
  • 1 Tbsp Soy sauce or tamari adds umami
  • 1 cup Dairy-free milk homemade cashew milk recommended
  • Salt and Black pepper to taste

Method
 

  1. Start by melting the vegan butter in a skillet over medium heat. Once melted, add the chopped onion and sauté for about 5-7 minutes until the onions are translucent and starting to caramelize. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  2. Sprinkle the cornstarch or flour over the onion and garlic mixture. Stir well to combine, ensuring the flour is evenly distributed and there are no lumps.
  3. Gradually pour in the vegetable broth while whisking continuously. This will help to combine the thickening agent with the liquid and prevent clumping. Bring the mixture to a simmer.
  4. Once simmering, stir in the soy sauce or tamari and the dairy-free milk. Continue to whisk until the gravy is smooth and starts to thicken, which should take about 3-5 minutes.
  5. Taste the gravy and season with salt and black pepper to your liking. If the gravy is too thick, you can add a little more vegetable broth or dairy-free milk to reach your desired consistency. Serve warm over your favorite dishes!
