Ingredients
  

  • 1/2 cup raw unsalted cashews (soaked in water overnight)
  • 3 tablespoons unsweetened vanilla almond milk
  • 1 1/2 tablespoons honey or agave
  • 1/2 teaspoon vanilla extract
  • 1 pinch sea salt
  • 2 teaspoons coconut oil (melted)
  • 4 tablespoons coconut oil (softened at room temperature)
  • 4 (8-inch) whole-wheat tortillas or gluten-free tortillas
  • 4 tablespoons coconut sugar
  • 4 teaspoons ground cinnamon
  • Toothpicks for securing pinwheels

Method
 

  1. Step 1: Drain the soaked cashews and place them in a blender or food processor. Add the unsweetened vanilla almond milk, honey or agave, vanilla extract, sea salt, and melted coconut oil. Blend until the mixture is creamy and smooth.
  2. Step 2: In a small bowl, mix together the coconut sugar and ground cinnamon.
  3. Step 3: Take one tortilla and spread a generous amount of the cashew filling over it, leaving a small border around the edges. Sprinkle a portion of the cinnamon sugar mixture over the filling.
  4. Step 4: Carefully roll the tortilla from one end to the other, creating a tight pinwheel. Repeat this process with the remaining tortillas, filling, and cinnamon sugar.
  5. Step 5: Using a sharp knife, slice the rolled tortillas into bite-sized pinwheels. You can use toothpicks to hold them together for easy serving.
  6. Step 6: Serve these pinwheel bites immediately or warm them up in the oven or microwave.
