Ingredients
  

For the Jam:
  • 2 medium/large or 3 small ripe bananas (about 1 1/4 to 1 1/2 cups, mashed)
  • 1 cup light brown sugar (packed)
  • 1/2 cup unsalted butter or vegan buttery spread (half of 1 stick)
  • 3 tablespoons lemon juice (juice of half of 1 juicy lemon)
  • 2 teaspoons cinnamon (or to taste)
  • 1 tablespoon vanilla extract (or to taste)
  • 2 teaspoons vanilla bean paste (or the scrapings of 1 or 2 vanilla beans; or substitute with extra vanilla extract, to taste)

Method
 

Preparation Steps:
  1. Start by peeling your ripe bananas. Place them in a medium mixing bowl and mash them with a fork until smooth. You can leave some small chunks if you prefer a bit of texture in your jam.
  2. In a large saucepan, melt the unsalted butter or vegan buttery spread over medium heat. Once melted, add the mashed bananas, brown sugar, lemon juice, cinnamon, vanilla extract, and vanilla bean paste. Stir to combine all the ingredients thoroughly.
  3. Bring the mixture to a gentle boil, then reduce the heat to low. Allow it to simmer for about 15 to 20 minutes, stirring occasionally. You’ll notice the mixture thickening and the sugars caramelizing, creating a beautiful golden color.
  4. After 20 minutes, check the consistency of your jam. If you want it thicker, continue to simmer for an additional 5 to 10 minutes. Remember, it will thicken as it cools, so don’t worry if it seems a bit loose at this stage.
  5. Once you’ve reached your desired consistency, remove the saucepan from heat and let it cool for a few minutes. Transfer the jam to a jar or airtight container and let it cool completely at room temperature before sealing it.

Notes

  • Store the jam in an airtight container in the refrigerator for up to two weeks.
  • For a different flavor, substitute brown sugar with coconut sugar.
  • This jam can also be used as a filling for pastries or cookies.
