  • 1 1/2 cups cheddar cheese shredded
  • 1 1/2 cups pepper jack cheese shredded
  • 15 oz chili canned or homemade, warmed or room temp
  • 1/2 cup black olives sliced
  • 1/2 cup pickled jalapeños sliced
  • 1/2 cup tomatoes diced
  • 3/4 cup sour cream
  • 2 pieces green onions diced
  • Salsa for serving

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C) for even baking and perfect cheese melting.
  2. Step 2: Spread out 6-8 large handfuls of corn tortilla chips in an even layer on a large baking sheet.
  3. Step 3: Sprinkle 1 1/2 cups of shredded cheddar cheese and 1 1/2 cups of shredded pepper jack cheese over the chips.
  4. Step 4: Spoon 15 oz of warmed chili over the cheese-covered chips.
  5. Step 5: Scatter 1/2 cup of sliced black olives and 1/2 cup of sliced, pickled jalapeños over the nachos.
  6. Step 6: Bake for about 10-15 minutes until the cheese is bubbly and slightly golden.
  7. Step 7: Garnish with 1/2 cup of diced tomatoes, 3/4 cup of sour cream, and 2 diced green onions.
  8. Step 8: Serve hot with a side of salsa for dipping.
