Ingredients

For the Filling:
  • 8 ounces cream cheese softened
  • 1/3 cup mayonnaise
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2 cups finely chopped cooked chicken
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly shredded Parmesan cheese
  • 2 cups chopped baby spinach leaves
  • Black pepper to taste
  • 3 large flour tortillas

Equipment

  • Mixing Bowl
  • Spatula
  • Sharp knife
  • Cutting board
  • Plastic Wrap

Method

Cooking Instructions:
  1. Step 1: In a large mixing bowl, combine the softened cream cheese, mayonnaise, Italian seasoning, and garlic powder. Use a spatula to mix until smooth and well-combined.
  2. Step 2: Next, fold in the finely chopped cooked chicken, sun-dried tomatoes, shredded mozzarella cheese, shredded Parmesan cheese, and chopped spinach leaves. Season with black pepper to taste. Mix until all ingredients are evenly distributed.
  3. Step 3: Lay one tortilla flat on a clean surface. Spread a generous portion of the filling mixture evenly over the tortilla, leaving a small border around the edges.
  4. Step 4: Carefully roll the tortilla tightly from one end to the other, ensuring the filling stays inside. If you find it difficult to roll, you can use plastic wrap to help shape it more tightly.
  5. Step 5: Once the tortilla is fully rolled, use a sharp knife to slice it into 1-inch thick pinwheels. Repeat the process with the remaining tortillas and filling mixture.
  6. Step 6: Arrange the pinwheels on a serving platter. You can serve them immediately, or refrigerate them for about 30 minutes to allow the flavors to meld together. These pinwheels are best served cold or at room temperature.

Notes

  • These pinwheels can be made a day in advance and stored in an airtight container.

  • For easier slicing, wrap the rolled tortillas in plastic wrap before chilling.
