Ingredients
  

For the Turkish Delight:
  • 1.5 cups Sugar
  • 2 tablespoons Sugar
  • 2 cups Water
  • 1 teaspoon Lemon juice
  • 7 tablespoons Cornstarch divided
  • 2 teaspoons Rose water
  • 0.5 cups Confectioners' sugar
  • 3 tablespoons Confectioners' sugar

Method
 

Instructions:
  1. Step 1: Prepare the Pan - Line your 9x9 inch square pan with parchment paper, leaving some overhang for easy removal later. Lightly dust the lined pan with a mixture of confectioners' sugar and cornstarch to prevent sticking.
  2. Step 2: Combine Sugar and Water - In a medium saucepan, combine the 1 1/2 cups + 2 tablespoons sugar and 2 cups water. Stir gently over medium heat until the sugar is completely dissolved.
  3. Step 3: Add Lemon Juice - Once the sugar has dissolved, add 1 teaspoon of lemon juice to the saucepan. This will help enhance the flavor and keep the mixture from crystallizing.
  4. Step 4: Prepare the Cornstarch Mixture - In a separate bowl, mix 6 tablespoons of cornstarch with 3/4 cup of water until smooth. This will thicken the Turkish Delight.
  5. Step 5: Combine Mixtures - Slowly pour the cornstarch mixture into the saucepan while whisking continuously. This is crucial to avoid lumps in your Turkish Delight.
  6. Step 6: Cook the Mixture - Continue to cook the mixture over medium heat, stirring constantly. As it heats, it will start to thicken. This process can take about 10-15 minutes. Keep stirring until it becomes glossy and pulls away from the sides of the pan.
  7. Step 7: Add Flavoring - Once thickened, remove the saucepan from heat and stir in the 2 teaspoons of rose water. This will infuse the Turkish Delight with its characteristic floral aroma.
  8. Step 8: Pour into Pan - Carefully pour the thick mixture into the prepared pan, spreading it evenly. Use a spatula to smooth the top if necessary.
  9. Step 9: Let It Set - Allow the Turkish Delight to cool at room temperature for several hours, or preferably overnight, until it is fully set.
  10. Step 10: Cut and Dust - Once set, lift the Turkish Delight out of the pan using the overhanging parchment paper. Dust a clean surface with confectioners' sugar and cornstarch, and cut the delight into small cubes. Toss each piece in the sugar mixture to prevent sticking.
