Ingredients
  

For the Dish:
  • 1 14-ounce bag frozen Trader Joes Cauliflower Gnocchi (do not thaw)
  • 5 ounces Trader Joes Chopped Tuscan Kale
  • 2 tablespoons extra-virgin olive oil
  • ¾ teaspoon kosher salt (divided)
  • ¼ teaspoon ground black pepper
  • 4 6-ounce salmon fillets or 3 (8-ounce) fillets
  • ¾ cup Trader Joe's Kale Cashew & Basil Pesto or Pesto Genovese, plus additional for serving

Method
 

Cooking Instructions:
  1. Start by seasoning the salmon fillets with ½ teaspoon of kosher salt and ground black pepper. Drizzle one tablespoon of olive oil on both sides of the fillets to ensure they cook evenly and remain moist.
  2. In a large skillet, heat one tablespoon of olive oil over medium heat. Once hot, add the frozen Trader Joes Cauliflower Gnocchi directly to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the gnocchi are golden brown and crispy on the outside.
  3. Once the gnocchi are cooked, add the chopped Tuscan kale to the skillet. Sprinkle with the remaining ¼ teaspoon of kosher salt and continue to sauté for an additional 2-3 minutes until the kale is wilted and tender. Remove the gnocchi and kale from the skillet and set aside.
  4. In the same skillet, add the seasoned salmon fillets skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. If you prefer, you can finish cooking the salmon in the oven for a few minutes at 400°F for an extra crispy skin.
  5. Once the salmon is cooked, add the gnocchi and kale back to the skillet. Pour in the Trader Joe's Kale Cashew & Basil Pesto and gently toss everything together until well combined and heated through.
  6. Plate the gnocchi and kale mixture, placing a piece of salmon on top. Drizzle with additional pesto for an extra flavor kick. Serve hot and enjoy your Trader Joes Cauliflower Gnocchi with Pesto Salmon!
