Cooking Instructions:
- Start by seasoning the salmon fillets with ½ teaspoon of kosher salt and ground black pepper. Drizzle one tablespoon of olive oil on both sides of the fillets to ensure they cook evenly and remain moist.
- In a large skillet, heat one tablespoon of olive oil over medium heat. Once hot, add the frozen Trader Joes Cauliflower Gnocchi directly to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the gnocchi are golden brown and crispy on the outside.
- Once the gnocchi are cooked, add the chopped Tuscan kale to the skillet. Sprinkle with the remaining ¼ teaspoon of kosher salt and continue to sauté for an additional 2-3 minutes until the kale is wilted and tender. Remove the gnocchi and kale from the skillet and set aside.
- In the same skillet, add the seasoned salmon fillets skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. If you prefer, you can finish cooking the salmon in the oven for a few minutes at 400°F for an extra crispy skin.
- Once the salmon is cooked, add the gnocchi and kale back to the skillet. Pour in the Trader Joe's Kale Cashew & Basil Pesto and gently toss everything together until well combined and heated through.
- Plate the gnocchi and kale mixture, placing a piece of salmon on top. Drizzle with additional pesto for an extra flavor kick. Serve hot and enjoy your Trader Joes Cauliflower Gnocchi with Pesto Salmon!
