- Gather all your ingredients, ensuring your nuts are toasted and coarsely chopped. This step is crucial as it enhances the flavor and adds that delightful crunch.
- In a heavy-bottomed saucepan, combine the unsalted butter and granulated sugar. Heat over medium heat, stirring continuously until the mixture is smooth and starts to boil.
- Attach a candy thermometer to the side of the saucepan. Continue to cook the mixture, stirring constantly, until it reaches 300°F (hard crack stage). This step is essential to achieve that perfect toffee texture.
- Once the mixture reaches the desired temperature, remove it from heat. Quickly stir in the vanilla extract and fine sea salt for added flavor.
- Add half of your toasted and coarsely chopped almonds to the mixture, stirring well to combine.
- Carefully pour the hot toffee mixture onto a parchment-lined baking sheet. Use a spatula to spread it evenly, ensuring it reaches the corners of the sheet.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth. Once melted, pour the chocolate over the toffee and spread it evenly.
- Sprinkle the remaining chopped almonds on top of the chocolate, gently pressing them in so they adhere well.
- Allow the toffee to cool at room temperature until set. For quicker results, you can place it in the refrigerator for about 30 minutes.
