  1. Gather all your ingredients, ensuring your nuts are toasted and coarsely chopped. This step is crucial as it enhances the flavor and adds that delightful crunch.
  2. In a heavy-bottomed saucepan, combine the unsalted butter and granulated sugar. Heat over medium heat, stirring continuously until the mixture is smooth and starts to boil.
  3. Attach a candy thermometer to the side of the saucepan. Continue to cook the mixture, stirring constantly, until it reaches 300°F (hard crack stage). This step is essential to achieve that perfect toffee texture.
  4. Once the mixture reaches the desired temperature, remove it from heat. Quickly stir in the vanilla extract and fine sea salt for added flavor.
  5. Add half of your toasted and coarsely chopped almonds to the mixture, stirring well to combine.
  6. Carefully pour the hot toffee mixture onto a parchment-lined baking sheet. Use a spatula to spread it evenly, ensuring it reaches the corners of the sheet.
  7. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth. Once melted, pour the chocolate over the toffee and spread it evenly.
  8. Sprinkle the remaining chopped almonds on top of the chocolate, gently pressing them in so they adhere well.
  9. Allow the toffee to cool at room temperature until set. For quicker results, you can place it in the refrigerator for about 30 minutes.
  10. Once set, break the toffee into bite-sized pieces. Store in an airtight container at room temperature, and enjoy your homemade treats!
