Ingredients
  

For the Sauce:
  • 3 tbsp butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 oz roasted peppers, chopped (see note)
  • 6 oz roasted peppers, pureed (see note)
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish
For the Fish:
  • 1 lb tilapia fillets

Method
 

  1. Start by gathering all your ingredients. Dice the medium onion and mince the garlic cloves. If you’re using jarred roasted peppers, make sure they are drained and ready to go.
  2. In a large skillet, melt 3 tablespoons of butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  3. Stir in the chopped roasted peppers, allowing them to cook with the garlic and onion for another 2-3 minutes. This will enhance their flavor and create a delicious base for the sauce.
  4. Transfer half of the mixture to a blender or food processor and puree it until smooth. Return the pureed sauce to the skillet, and stir to combine with the remaining ingredients.
  5. Add the heavy cream and grated Parmesan cheese to the skillet. Stir well to combine, allowing the sauce to simmer gently for about 5 minutes. Season with salt and pepper to taste.
  6. While the sauce simmers, season the tilapia fillets with salt and pepper. In a separate large skillet, add a bit of oil and heat over medium-high heat. Cook the fillets for about 3-4 minutes on each side or until they are opaque and flaky.
  7. When the tilapia is cooked through, gently place the fillets in the skillet with the roasted pepper sauce. Spoon the sauce over the fish, allowing it to coat each fillet. Garnish with chopped parsley for a fresh touch. Serve immediately with your favorite side dishes.

  • For a festive twist, add a pinch of red pepper flakes to the sauce for a bit of heat.
