  • 1 tsp sugar
  • 1-1/2 tsp fresh tarragon (finely chopped)
  • 1/4 tsp salt
  • 1/4 tsp pepper

  1. Start by washing the heirloom potatoes thoroughly. Place them in a large pot, cover them with water, and bring to a boil over medium-high heat. Cook until they are fork-tender, which usually takes about 15-20 minutes. Once cooked, drain and let them cool before cutting into bite-sized pieces.
  2. In a mixing bowl, combine the mayonnaise, chopped chives, grated lemon zest, fresh lemon juice, sugar, tarragon, salt, and pepper. Whisk until all the ingredients are well incorporated. This creamy dressing is what makes The Ritz Carlton Potato Salad truly special.
