THE BEST CHICKEN MEATBALLS EVER

Ingredients
  

  • 1 lb ground chicken thighs (or breast)
  • 1 medium onion (chopped)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 whole egg
  • ½ cup parsley (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp pepper
  • Vegetable oil (for frying)
  • 24 oz marinara sauce (jar of your favorite)

  • Large mixing bowl
  • Skillet
  • Spatula or wooden spoon
  • Baking Sheet
  • Pot

Method
 

  1. In a skillet over medium heat, melt the butter and olive oil. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. In a large mixing bowl, combine the ground chicken, sautéed onions, breadcrumbs, milk, egg, chopped parsley, minced garlic, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs about 1 to 1.5 inches in diameter.
  4. In the same skillet, add enough vegetable oil to cover the bottom and heat over medium-high heat.
  5. Carefully place the meatballs in the skillet and fry for about 4-5 minutes on each side, until golden brown and cooked through.
  6. In a separate pot, warm your favorite marinara sauce over medium heat.
  7. Serve the meatballs with the warm marinara sauce over pasta or on their own. Enjoy!

Notes

  • Use ground turkey for a leaner option.
  • Substitute whole wheat breadcrumbs for added fiber.
  • Freeze cooked meatballs for up to 3 months for easy meal prep.
