Ingredients
  

For the Banana Bread:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon Penzy's Cake Spice
  • 1/2 cup unsalted butter softened
  • 3/4 cup packed light brown sugar
  • 2 large eggs lightly beaten
  • 2 teaspoons pure vanilla extract
  • 2 1/3 cups mashed overripe bananas (about 5 medium)
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup packed light brown sugar (for topping)
  • 1/2 teaspoon Penzy's Cake Spice (for topping)
  • 1 pinch salt (for topping)
  • 2 tablespoons chilled unsalted butter diced (for topping)

Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C). This ensures that your banana bread bakes evenly.
  2. Grease your loaf pan with butter or line it with parchment paper for easy removal later.
  3. In a large bowl, whisk together the flour, baking soda, salt, and Penzy's Cake Spice.
  4. In another bowl, beat the softened butter and light brown sugar together until light and fluffy, about 2-3 minutes.
  5. Gradually add the lightly beaten eggs and vanilla extract to the butter and sugar mixture. Mix until well combined.
  6. Fold in the mashed overripe bananas.
  7. Gently fold the dry ingredients into the wet mixture until just combined.
  8. In a small bowl, mix together the topping ingredients: flour, brown sugar, Penzy's Cake Spice, and a pinch of salt. Add the diced butter and mix until crumbly.
  9. Pour the batter into the prepared loaf pan and sprinkle the topping mixture over the batter.
  10. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a cooling rack.
