Ingredients
  

  • 1 lb ground turkey
  • 1/3 cup fish sauce
  • 1/3 cup rice vinegar (don’t use seasoned vinegar, which contains sugar)
  • 1 tablespoon Asian sesame oil
  • 3/4 teaspoon red pepper flakes
  • 1 teaspoon sweetener (optional)
  • 1 head butter or romaine lettuce leaves separated
  • Fresh herbs (cilantro and mint for garnish)
  • Chopped peanuts (optional, for added crunch)
  • Shredded carrots (optional, for serving)
  • Sliced bell peppers (optional, for serving)

Method
 

Preparation
  1. In a mixing bowl, combine the fish sauce, rice vinegar, Asian sesame oil, red pepper flakes, and sweetener if using. Whisk together until well-blended.
  2. Heat a skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes.
  3. Once the turkey is fully cooked, pour the sauce over the meat. Stir well to ensure all the turkey is coated in that delicious flavor. Let it simmer for an additional 3-4 minutes.
  4. While the turkey is simmering, wash and separate the lettuce leaves. Choose larger leaves for wrapping.
  5. To assemble, take a lettuce leaf and spoon a generous amount of the turkey mixture into the center. Top with fresh herbs, chopped peanuts, shredded carrots, and bell peppers if desired. Roll it up and enjoy!

Notes

  • These wraps can be made ahead of time for meal prep.
  • Store turkey mixture in an airtight container for up to 3-4 days.
  • Assembled wraps are best enjoyed fresh but can be stored in the fridge for a short period.
