In a large mixing bowl, combine the ground turkey, teriyaki sauce, tapioca flour, grated ginger, minced garlic, and chopped green onions. Use your hands or a spatula to mix everything until well combined. The mixture should hold together well; if it’s too wet, add a bit more tapioca flour.
Using your hands, shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper for easy cleanup.
In a skillet, heat a couple of tablespoons of coconut oil over medium heat. Once hot, add the meatballs in batches, being careful not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally until they are golden brown and cooked through.
Once the meatballs are cooked, drizzle additional teriyaki sauce over them for a beautiful glaze. Let them cook for another minute or two, allowing the sauce to caramelize slightly.
