Ingredients
  

  • 1 lb ground turkey meat
  • 2 Tbsp teriyaki sauce plus more for glaze
  • 1/3 cup tapioca flour plus more if necessary
  • 1 Tbsp fresh ginger peeled and grated
  • 1 clove garlic minced
  • 2 green onions finely chopped
  • Coconut oil for cooking

Method
 

  1. In a large mixing bowl, combine the ground turkey, teriyaki sauce, tapioca flour, grated ginger, minced garlic, and chopped green onions. Use your hands or a spatula to mix everything until well combined. The mixture should hold together well; if it’s too wet, add a bit more tapioca flour.
  2. Using your hands, shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper for easy cleanup.
  3. In a skillet, heat a couple of tablespoons of coconut oil over medium heat. Once hot, add the meatballs in batches, being careful not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally until they are golden brown and cooked through.
  4. Once the meatballs are cooked, drizzle additional teriyaki sauce over them for a beautiful glaze. Let them cook for another minute or two, allowing the sauce to caramelize slightly.
  5. Remove the meatballs from the skillet and serve hot. They are delicious on their own or paired with steamed vegetables or a fresh salad. Enjoy the burst of flavors in every bite!

Notes

  • Prepare the meatball mixture a day in advance and store in the refrigerator until ready to cook.
  • These meatballs freeze well; freeze uncooked meatballs individually before transferring to a freezer-safe bag.
  • Cooked meatballs can be stored in an airtight container in the refrigerator for up to 4 days.
