Ingredients
  

For the Filling:
  • 16 ounces Refried Beans (1 can)
  • 4.5 ounces Chopped Green Chiles (1 can)
  • 1 ounce Taco Seasoning (1 packet)
  • 1 cup Shredded Mexican Blend Cheese
  • 0.5 cup Chopped Fresh Cilantro
  • 24 (3-inch) Flour Tortillas (2 packages)
  • Canola Oil for frying

Method
 

Directions:
  1. In a mixing bowl, combine the refried beans, chopped green chiles, taco seasoning, shredded cheese, and chopped cilantro. Stir well until all ingredients are evenly mixed.
  2. To make the tortillas pliable, warm them in a skillet over low heat for about 30 seconds on each side.
  3. Take a warmed tortilla and scoop a generous tablespoon of the filling onto the lower third of the tortilla. Roll the tortilla tightly around the filling, tucking in the sides as you go.
  4. In a large skillet, heat about ½ inch of canola oil over medium heat. Carefully place the rolled taquitos seam-side down in the oil, cooking in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side.
  5. Using a slotted spoon, remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauces like salsa or guacamole.

Notes

  • For extra crunch, let the taquitos rest for a minute on the paper towels before serving.
  • Feel free to add diced cooked chicken or ground beef to the filling for a heartier option.
  • For a spicy kick, consider adding jalapeños to the filling mixture.
