Ingredients

  • 1 6-oz. tomato paste
  • 1 8.5-oz. jar sun-dried tomatoes with Italian herbs packed in oil drained
  • 1 tbsp brown sugar
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp kosher salt

Equipment

  • Food Processor
  • Measuring Spoons
  • Spatula
  • Storage container

Method

  1. Begin by gathering all your ingredients. Open the jar of sun-dried tomatoes and drain the oil. Measure out the tomato paste, brown sugar, dried basil, garlic powder, and kosher salt.
  2. In a food processor, add the drained sun-dried tomatoes, tomato paste, brown sugar, dried basil, garlic powder, and kosher salt.
  3. Secure the lid on the food processor and blend the ingredients until you achieve a smooth and creamy consistency. If the mixture is too thick, you can add a little olive oil or water to help it blend better.
  4. Taste the spread and adjust the seasonings if necessary. If you prefer a sweeter flavor, consider adding a touch more brown sugar.
  5. Transfer the Sun Dried Tomato Spread to a storage container and refrigerate for at least an hour to let the flavors meld together. It can be stored in the fridge for up to a week.

Notes

  • For a vibrant twist, mix in fresh herbs like basil or parsley in spring.
  • Add diced olives in summer for a Mediterranean flair.
  • Incorporate roasted red peppers in fall for added sweetness.
  • Stir in crushed red pepper flakes in winter for a spicy kick.
