  • 2 teaspoons kosher salt or sea salt
  • freshly cracked black pepper to taste
  • cooking oil with a high smoke point
  • butter for basting
  • fresh herbs optional, like rosemary or thyme

Method
 

Cooking Instructions:
  1. Start by taking your choice steak out of the refrigerator. Allow it to come to room temperature for about 30-60 minutes. Pat the steak dry with paper towels.
  2. Sprinkle 2 teaspoons kosher salt or sea salt evenly over both sides of the steak. Add freshly cracked black pepper to taste.
  3. Place your cast iron skillet over medium-high heat and add a tablespoon of cooking oil until shimmering.
  4. Carefully place the steak in the skillet. Let it sear for about 3-5 minutes without moving it.
  5. After the first side is browned, flip the steak using tongs. Add butter and optional herbs, basting the steak as it cooks.
  6. Check the internal temperature with a meat thermometer, aiming for 130°F (54°C) for medium-rare.
  7. Transfer the steak to a cutting board and let it rest for at least 5-10 minutes before slicing.
  8. Slice the steak against the grain and serve as desired.
