Cooking Instructions:
- Start by taking your choice steak out of the refrigerator. Allow it to come to room temperature for about 30-60 minutes. Pat the steak dry with paper towels.
- Sprinkle 2 teaspoons kosher salt or sea salt evenly over both sides of the steak. Add freshly cracked black pepper to taste.
- Place your cast iron skillet over medium-high heat and add a tablespoon of cooking oil until shimmering.
- Carefully place the steak in the skillet. Let it sear for about 3-5 minutes without moving it.
- After the first side is browned, flip the steak using tongs. Add butter and optional herbs, basting the steak as it cooks.
- Check the internal temperature with a meat thermometer, aiming for 130°F (54°C) for medium-rare.
- Transfer the steak to a cutting board and let it rest for at least 5-10 minutes before slicing.
- Slice the steak against the grain and serve as desired.
