- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Thaw the frozen chopped spinach and squeeze out any excess liquid.
- Step 3: In a large mixing bowl, combine cooked white rice, melted butter, shredded cheddar cheese, grated parmesan cheese, chopped onions, minced garlic, beaten eggs, and milk. Season with salt and pepper.
- Step 4: Gently fold in the prepared spinach.
- Step 5: Pour the mixture into a greased baking dish and spread evenly.
- Step 6: Sprinkle remaining grated parmesan cheese on top. Optionally, add shredded mozzarella cheese.
- Step 7: Bake for about 25-30 minutes, until golden and bubbly.
- Step 8: Allow to cool for a few minutes before serving.
Notes
- Make sure to squeeze out excess liquid from the spinach to prevent a watery bake.
- Use cooked rice that is not mushy for the best texture.
- For a vegan option, replace eggs with a suitable egg replacer.
