Ingredients
  

For the Bake:
  • 1 package frozen chopped spinach (10 ounce, thawed and squeezed to remove excess liquid)
  • 2 cups cooked white rice
  • 1/3 cup melted butter
  • 2 cups shredded cheddar cheese
  • 3/4 cup grated parmesan cheese
  • 1/3 cup chopped onions or 2 large green onions, chopped
  • 1 clove garlic minced
  • 3 large eggs beaten
  • 3/4 cup milk
  • to taste salt and pepper
  • 1/4 cup grated Parmesan cheese for topping
  • shredded mozzarella cheese (optional)

Equipment

  • Baking dish (9x13 inches)
  • Vegetable peeler or knife

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Thaw the frozen chopped spinach and squeeze out any excess liquid.
  3. Step 3: In a large mixing bowl, combine cooked white rice, melted butter, shredded cheddar cheese, grated parmesan cheese, chopped onions, minced garlic, beaten eggs, and milk. Season with salt and pepper.
  4. Step 4: Gently fold in the prepared spinach.
  5. Step 5: Pour the mixture into a greased baking dish and spread evenly.
  6. Step 6: Sprinkle remaining grated parmesan cheese on top. Optionally, add shredded mozzarella cheese.
  7. Step 7: Bake for about 25-30 minutes, until golden and bubbly.
  8. Step 8: Allow to cool for a few minutes before serving.

Notes

  • Make sure to squeeze out excess liquid from the spinach to prevent a watery bake.
  • Use cooked rice that is not mushy for the best texture.
  • For a vegan option, replace eggs with a suitable egg replacer.
