- Start by seasoning your chicken breast tenders or boneless skinless chicken breast. In a small bowl, combine salt, garlic powder, onion powder, Italian seasoning, smoked paprika, and chipotle chili powder. Rub this spice mix all over the chicken to ensure it’s well-coated.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the seasoned chicken. Cook for about 5-7 minutes, or until the chicken is cooked through and has a nice golden brown color. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced red onion, red bell pepper, and jalapeño. Sauté for about 3-4 minutes until the vegetables begin to soften. Next, add the zucchini and minced garlic, cooking for an additional 2-3 minutes.
- Now it's time to introduce the star of the show back into the skillet! Add the frozen corn and the cooked chicken to the vegetable mixture. Stir well, allowing the flavors to meld together. Season with salt and pepper to taste.
- Once everything is heated through, squeeze the juice of one lime over the dish. This brightens the flavors and adds a fresh finish. Give it one last stir, and your Spicy Chicken is ready to serve!
