Ingredients
  

For the Crust:
  • 12 sheets graham crackers
  • 6 tablespoons salted butter melted
For the Mousse:
  • 6 ounces milk chocolate
  • 8 ounces semi-sweet or dark chocolate finely chopped
  • 4 large egg yolks
  • 3 cups heavy cream
  • 1 pinch flaky sea salt
  • 2 teaspoons vanilla extract
  • 4 egg whites whipped
  • 1 cup granulated sugar
  • 1 1/2 teaspoons cornstarch

Method
 

Stepwise Method:
  1. Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In a mixing bowl, combine the finely crushed graham cracker sheets and melted salted butter. Stir until the mixture resembles wet sand. Press it firmly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes, then remove and let it cool while you prepare the mousse.
  2. Step 2: Make the Chocolate Mixture - In a double boiler or microwave-safe bowl, melt the 6 ounces of milk chocolate until smooth. Add the finely chopped 8 ounces of semi-sweet or dark chocolate to the melted milk chocolate and stir until melted and combined. Allow this mixture to cool slightly.
  3. Step 3: Prepare the Mousse Base - In a separate bowl, whisk together the egg yolks, 2 teaspoons of vanilla extract, and a pinch of flaky sea salt. Gradually whisk in the melted chocolate mixture until fully combined.
  4. Step 4: Whip the Cream - In a large mixing bowl, beat the heavy cream until soft peaks form. Gently fold about one-third of the whipped cream into the chocolate mixture to lighten it. Then, fold in the remaining whipped cream until fully combined.
  5. Step 5: Whip the Egg Whites - In another clean bowl, whip the 4 egg whites until soft peaks form. Gradually add in the granulated sugar, continuing to whip until stiff peaks form. Gently fold the egg whites into the chocolate mousse mixture, being careful not to deflate the air you've incorporated.
  6. Step 6: Assemble the Bars - Pour the chocolate mousse over the cooled graham cracker crust, spreading it evenly. Cover and refrigerate for at least 4 hours, or until set.
  7. Step 7: Serve and Enjoy - Once set, cut the bars into squares and serve chilled. You can garnish them with additional whipped cream or a drizzle of chocolate sauce if desired.
