  • 2 teaspoons lemon juice

  • 2 oz arugula (rocket)
  • 2 oz pea shoots
  • ½ cup fresh mint
  • ½ cup fresh dill
  • 9.5 oz smoked salmon
  • 2 avocados sliced

Method
 

Preparation Steps:
  1. Begin by peeling the oranges. Cut them into segments, making sure to remove any seeds. Set them aside.
  2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, and a pinch of salt.
  3. In a large mixing bowl, combine the arugula, pea shoots, fresh mint, and dill.
  4. Carefully layer the smoked salmon over the greens. Slice the avocados in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into slices and arrange them atop the salmon.
  5. Sprinkle the orange segments over the salad, allowing their juices to mingle with the greens and dressing.
  6. Drizzle your prepared dressing over the entire salad. Toss gently to ensure everything is coated without breaking the salmon or avocado.
  7. Transfer the salad to a serving platter and enjoy immediately for the best flavors and textures!
