- Step 1: Prepare Your Olives - Rinse your 6 oz olives under cold water to remove excess brine. Pat them dry with a paper towel.
- Step 2: Mix the Marinade - In a mixing bowl, combine 2 tablespoons of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of dried herbs, and a pinch of salt. Stir well to create a flavorful marinade.
- Step 3: Coat the Olives - Add the olives to the marinade, tossing them gently to ensure each olive is well-coated. Let them sit for about 10-15 minutes to absorb the flavors.
- Step 4: Prepare the Smoking Pouch - Cut a piece of aluminum foil large enough to hold wood chips. Add your choice of wood chips to the center of the foil, fold it into a pouch, and poke a few holes in the top to allow smoke to escape.
- Step 5: Heat the Smoker or Grill - Preheat your smoker or grill to medium heat. Place the smoking pouch directly on the heat source. Wait for the wood chips to start smoking.
- Step 6: Smoke the Olives - Place the olives on the baking sheet and set it inside the smoker or on the grill. Close the lid and smoke for about 30 minutes, checking occasionally.
- Step 7: Serve and Enjoy! - Once your olives have absorbed the smoky goodness, remove them from the smoker. Allow them to cool slightly before serving.
