In a skillet over medium heat, add the spicy ground sausage. Use a spatula to break it apart and cook until it’s browned and fully cooked through, about 5-7 minutes. Once done, remove it from the heat and set aside.
In a mixing bowl, crack the 5 large eggs and add 2 tablespoons of milk or cream. Whisk together until well combined. In the same skillet, melt 1 tablespoon of butter over medium heat. Once melted, pour in the egg mixture. Stir gently and cook until the eggs are fluffy and just set.
While the eggs are cooking, cut the large everything bagels in half and place them on a baking sheet, cut side up. Toast them in a preheated oven at 400°F (200°C) for about 5 minutes, or until they are slightly crispy.
Remove the bagels from the oven. On each bagel half, layer a generous amount of cooked sausage followed by the scrambled eggs. Top each with a handful of shredded Mexican cheese.
Place the assembled bagel pizzas back in the oven under the broiler. Broil for about 3-5 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning!
Once the cheese is perfectly melted, remove the bagel pizzas from the oven and let them cool slightly. Cut them into quarters for easy sharing, and enjoy your delicious creation!
