Salmon Patties Salmon Cakes

Ingredients
  

  • 1 pound Salmon fresh fillets or canned
  • 1 cup Breadcrumbs panko or regular
  • 2 large Eggs beaten
  • 1 bunch Green onions chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh herbs dill or parsley
  • 2 tablespoons Lemon juice freshly squeezed
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Cooking oil olive oil or choice

Method
 

  1. If using fresh salmon, cook it by poaching, baking, or grilling until cooked through. Let cool and flake into a bowl. If using canned salmon, drain and add to the bowl.
  2. Add breadcrumbs, beaten eggs, chopped green onions, minced garlic, fresh herbs, lemon juice, salt, and pepper to the bowl with the salmon. Mix until well combined.
  3. Shape the mixture into patties, about 2-3 inches in diameter. Place on a plate or baking sheet lined with parchment.
  4. Heat a couple of tablespoons of oil in a frying pan over medium heat until hot.
  5. Carefully place the patties in the hot oil. Cook for about 4-5 minutes on each side until golden brown and crisp.
  6. Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve warm with a dipping sauce or salad.

Notes

  • Store cooked patties in an airtight container in the fridge for up to 3 days.
  • Freeze uncooked patties on a baking sheet before transferring to a freezer bag for up to 3 months.
  • Reheat in a skillet or oven until heated through for best results.
