Preparation Steps:
  1. In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and a pinch of salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil. Allow to boil for 1-2 minutes, then remove from heat. Stir in the chopped chocolate and vanilla extract until melted and smooth. Set aside to cool.
  2. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla together until soft peaks form. Be careful not to over-whip; you want it to be fluffy and spreadable.
  3. Once the pudding has cooled to room temperature, start layering your parfaits. In a serving glass, add a generous layer of chocolate pudding, followed by a layer of whipped cream. Sprinkle some chopped peanuts, almonds, and mini marshmallows over the whipped cream.
  4. Repeat the layers until your serving glass is filled. Top the final layer of whipped cream with some mini marshmallows, chocolate chips, and a drizzle of melted chocolate or hot fudge if desired.
  5. Refrigerate the parfaits for at least 2 hours to allow the flavors to meld and the pudding to set. Serve chilled and enjoy your delicious Rocky Road Pudding Parfaits.
