Preparation Steps:
- In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and a pinch of salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil. Allow to boil for 1-2 minutes, then remove from heat. Stir in the chopped chocolate and vanilla extract until melted and smooth. Set aside to cool.
- In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla together until soft peaks form. Be careful not to over-whip; you want it to be fluffy and spreadable.
- Once the pudding has cooled to room temperature, start layering your parfaits. In a serving glass, add a generous layer of chocolate pudding, followed by a layer of whipped cream. Sprinkle some chopped peanuts, almonds, and mini marshmallows over the whipped cream.
- Repeat the layers until your serving glass is filled. Top the final layer of whipped cream with some mini marshmallows, chocolate chips, and a drizzle of melted chocolate or hot fudge if desired.
