  • 6 large peppers mix of sweet and slightly spicy
  • 1/3 cup olive oil
  • 2 tablespoons olive oil for brushing the bread
  • 1 teaspoon coarse salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 loaf rustic country-style bread cut into 1/2-inch thick slices

Method
 

Instructions:
  1. Start by washing your selected peppers under cold running water. Remove the stems and seeds, then cut them into strips or quarters, depending on your preference.
  2. Preheat your oven to 400°F (200°C). Spread the pepper pieces on a baking sheet lined with parchment paper if desired. Drizzle with 1/3 cup of olive oil and sprinkle with coarse salt and black pepper. Toss to coat evenly.
  3. Roast the peppers in the preheated oven for about 25-30 minutes, or until they are tender and slightly charred. Make sure to stir them halfway through for even roasting. Once done, remove from the oven and let them cool slightly.
  4. While the peppers are roasting, brush the slices of rustic country-style bread with the remaining 2 tablespoons of olive oil. Arrange them on a separate baking sheet and place them in the oven for the last 10-12 minutes of the peppers' roasting time. You want them to be golden and crisp.
  5. Once the bread is toasted and the peppers are roasted, it's time to assemble. Layer the roasted peppers generously on each toasted slice of bread. You can add a sprinkle of fresh herbs or feta cheese for an extra touch if desired.
  6. Transfer your Roasted Pepper Crostini to a serving platter and serve warm. This dish is perfect for entertaining or as a delightful snack to enjoy anytime!
