- Start by washing your selected peppers under cold running water. Remove the stems and seeds, then cut them into strips or quarters, depending on your preference.
- Preheat your oven to 400°F (200°C). Spread the pepper pieces on a baking sheet lined with parchment paper if desired. Drizzle with 1/3 cup of olive oil and sprinkle with coarse salt and black pepper. Toss to coat evenly.
- Roast the peppers in the preheated oven for about 25-30 minutes, or until they are tender and slightly charred. Make sure to stir them halfway through for even roasting. Once done, remove from the oven and let them cool slightly.
- While the peppers are roasting, brush the slices of rustic country-style bread with the remaining 2 tablespoons of olive oil. Arrange them on a separate baking sheet and place them in the oven for the last 10-12 minutes of the peppers' roasting time. You want them to be golden and crisp.
- Once the bread is toasted and the peppers are roasted, it's time to assemble. Layer the roasted peppers generously on each toasted slice of bread. You can add a sprinkle of fresh herbs or feta cheese for an extra touch if desired.
