Ingredients
  

  • 2 pounds carrots peeled and cut into uniform pieces
  • 2 tablespoons olive oil to enhance flavor and promote browning
  • 1/2 teaspoon garlic powder optional for an extra kick
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • 2 teaspoons chopped fresh dill or thyme optional garnish

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is key to achieving that sought-after caramelization.
  2. Peel the carrots and cut them into uniform pieces, about 1 to 2 inches long. This ensures they cook evenly.
  3. In a mixing bowl, combine the cut carrots with olive oil, garlic powder (if using), salt, and pepper. Toss until the carrots are well coated.
  4. Spread the seasoned carrots in a single layer on your prepared baking sheet. Make sure they have enough space to roast rather than steam.
  5. Place the baking sheet in the oven and roast for about 25-30 minutes. Flip the carrots halfway through to ensure even browning. They should be tender and caramelized when done.
  6. Once roasted, remove the carrots from the oven. If desired, sprinkle with chopped fresh dill or thyme for added flavor and presentation. Serve warm and enjoy!
