  • 2 T extra virgin olive oil
  • 2 T fresh squeezed lemon juice
  • to taste sea salt (I used a sea salt grinder)
  • 1/2 cup freshly grated Pecorino-Romano cheese

Method
 

Directions
  1. Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving that perfect roasted texture.
  2. Wash and dry your broccoli thoroughly. Cut the broccoli into bite-sized pieces, ensuring that the flower ends are no larger than an inch across.
  3. In a large mixing bowl, combine the broccoli with the extra virgin olive oil, fresh lemon juice, and sea salt. Toss until the broccoli is well coated.
  4. Line your baking sheet with parchment paper for easy clean-up if desired. Spread the broccoli out in a single layer, ensuring that the pieces are not overcrowded.
  5. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the broccoli is tender and the edges are crispy.
  6. Once the broccoli is perfectly roasted, remove it from the oven. Immediately sprinkle the freshly grated Pecorino-Romano cheese over the hot broccoli, allowing it to melt slightly.
  7. Transfer the roasted broccoli to a serving dish, drizzle with more lemon juice if desired, and serve warm.

  • For the best flavor, always use freshly grated cheese rather than pre-grated options.
  • Don’t skip the lemon juice! It adds flavor and balances the richness of the cheese.
