Ingredients

For the Scones:
  • 2 1/4 cups White Lily Self-Rising Flour
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 6 tablespoons cold butter cut into pieces
  • 3/4 cup heavy whipping cream
  • 2 teaspoons red food coloring
  • 1 teaspoon vanilla extract
For the Icing:
  • 6 ounces cream cheese softened
  • 4 tablespoons butter softened
  • 1 to 1 1/2 cups confectioners sugar
  • 1 1/2 to 2 tablespoons milk

Equipment

  • Mixing Bowl
  • Baking Sheet
  • Whisk
  • Pastry Cutter
  • Oven

Method

Instructions:
  1. Step 1: Preheat Your Oven - Start by preheating your oven to 400°F (200°C). This ensures that your scones will bake evenly and rise beautifully.
  2. Step 2: Combine Dry Ingredients - In a large mixing bowl, whisk together the White Lily Self-Rising Flour, sugar, and unsweetened cocoa powder until well combined.
  3. Step 3: Incorporate Butter - Add the cold butter pieces to the dry ingredients. Using a pastry cutter, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Step 4: Mix Wet Ingredients - In a separate bowl, combine the heavy whipping cream, red food coloring, and vanilla extract. Stir until the food coloring is evenly distributed.
  5. Step 5: Combine Wet and Dry Mixtures - Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Step 6: Shape the Dough - Turn the dough out onto a lightly floured surface. Gently knead it a few times until it comes together.
  7. Step 7: Bake the Scones - Place the scones on a lined baking sheet, leaving space between each one. Bake for 15-18 minutes or until they are set and slightly golden.
  8. Step 8: Prepare the Cream Cheese Icing - In a mixing bowl, beat together the softened cream cheese and softened butter until smooth. Gradually add the confectioners sugar and mix until well incorporated.
  9. Step 9: Drizzle and Enjoy - Once the scones are baked and cooled slightly, drizzle the cream cheese icing over the top. Serve warm.
