Start by soaking your pitted dates in warm water for about 10 minutes if they are a bit dry. This helps soften them and makes blending easier.
In a food processor, combine the soaked dates, cocoa or cacao powder, and salt. Blend until the mixture is smooth and sticky. You may need to scrape down the sides of the bowl a few times to ensure everything is well mixed.
If you’re using mini chocolate chips, add them to the mixture and pulse a few times to incorporate them evenly.
Using your hands, take small amounts of the fudge mixture and roll them into bite-sized balls. Aim for about one inch in diameter for a perfect snack size.
If you want to add some flair, roll the fudge balls in cocoa powder, shredded coconut, or drizzle with melted chocolate.
Place the fudge balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set. Once they’re firm, they’re ready to enjoy!
