Quinoa Lentil Burger

Ingredients
  

  • 1 tablespoon olive oil
  • 2 teaspoons olive oil
  • 1/4 cup red onion diced
  • 1 cup quinoa cooked according to package instructions
  • 1 cup brown lentils cooked and drained
  • 4 ounces green chilies diced, canned
  • 1/3 cup rolled oats
  • 1/4 cup white whole wheat flour or whole wheat flour
  • 2 teaspoons cornstarch
  • 1/4 cup whole wheat panko bread crumbs or whole grain bread crumbs
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • 3 teaspoons honey

Method
 

  1. In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion and sauté for about 4-5 minutes, or until translucent and fragrant.
  2. In a large mixing bowl, combine the cooked quinoa, brown lentils, sautéed red onion, diced green chilies, rolled oats, white whole wheat flour, cornstarch, panko bread crumbs, garlic powder, cumin, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.
  3. Use your hands to form the mixture into burger patties. You should be able to make about 6-8 patties, depending on your desired size.
  4. In the same frying pan, add another teaspoon of olive oil. Once heated, place the patties in the pan and cook for about 4-5 minutes on each side or until they are golden brown and crispy.
  5. Serve your Quinoa Lentil Burgers on whole grain buns with your choice of toppings, such as lettuce, tomatoes, or avocado. Enjoy!

Notes

  • Adjust the flour or oats if the mixture feels too wet or dry.
  • You can bake the patties instead of frying if preferred.
  • Store uncooked patties in the freezer for up to 3 months.
