Preheat your oven to 350°F (175°C).
Grease your 9x13 inch baking pan with butter or line it with parchment paper.
In a medium bowl, whisk together the all-purpose flour, sea salt, and baking soda.
In a large mixing bowl, combine the melted butter, light brown sugar, and granulated sugar. Whisk until well combined. Add in the eggs and vanilla extract, mixing until smooth.
Gradually add the dry mixture to the wet mixture, stirring until just combined.
Gently fold in the semi-sweet chocolate chips and the chopped potato chips using a spatula.
Pour the batter into your prepared baking pan and smooth the top. Sprinkle the additional chopped potato chips on top.
Place the pan in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown.
Once baked, allow the blondies to cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely.
