Ingredients
  

  • 1 cup cornstarch
  • 1 cup mozzarella cheese shredded
  • 2 tsp salt
  • to taste vegetable oil for frying
  • to taste grated Parmesan cheese for topping
  • to taste chopped fresh parsley for garnish

Method
 

  1. Start by peeling the russet potatoes using a potato peeler. Once peeled, grate the potatoes into a large bowl.
  2. Place the shredded potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a mixing bowl, combine the grated potatoes, cornstarch, shredded mozzarella cheese, and salt. Mix well until all ingredients are thoroughly incorporated.
  4. Take small portions of the mixture and shape them into sticks, about 3 inches long and 1 inch wide.
  5. In a large saucepan, heat enough vegetable oil over medium heat. To check if the oil is ready, drop a small piece of the mixture into the oil.
  6. Carefully place the shaped sticks into the hot oil, frying them for about 3-4 minutes on each side or until they are golden brown and crispy.
  7. Using a slotted spoon, remove the Potato Cheese Sticks from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with grated Parmesan cheese and chopped fresh parsley.

Notes

  • Make sure to dry the grated potatoes thoroughly to avoid soggy sticks.
  • Fry in batches to maintain the oil temperature for even cooking.
  • Let the finished sticks cool slightly before serving; this helps them hold their shape better.
