  • 2 tbsp walnuts chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp pine nuts

Preparation Steps
  1. Begin by finely chopping the white and red cabbage. You want the pieces to be small enough to enjoy in a single bite. Next, grate the carrots and slice the roasted red peppers into thin strips.
  2. In a large mixing bowl, combine the chopped white cabbage, red cabbage, grated carrots, sliced roasted peppers, and finely chopped celery. Toss them gently until they are well mixed.
  3. In a separate bowl, whisk together the lemon juice, minced garlic, white vinegar, olive oil, balsamic vinegar, salt, and pepper. This dressing is what brings all the flavors together, so be sure to adjust the seasoning according to your taste.
  4. Pour the dressing over the vegetable mixture and toss everything together until all the veggies are coated beautifully.
  5. To finish off your Politiki Salad, sprinkle in the raisins, walnuts, chopped celery, and pine nuts. Give it another gentle toss to distribute these ingredients evenly.
  6. For the best flavor, let the salad sit for about 30 minutes in the refrigerator before serving. This allows the ingredients to marinate and enhances the taste.
