  • 1 14.5-ounce can petite diced tomatoes do not drain; no-salt added
  • 1 cup pizza/marinara/pasta sauce
  • 1 tablespoon dried oregano
  • 1 5-ounce package mini pepperoni divided
  • ½ teaspoon freshly ground black pepper
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 2 teaspoons fresh parsley finely minced for garnishing

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the drained kidney beans, pinto beans, petite diced tomatoes (with their juice), pizza sauce, dried oregano, half of the mini pepperoni, and black pepper. Stir until everything is well mixed.
  3. Step 3: Pour the bean mixture into a 9x13-inch baking dish, spreading it out evenly.
  4. Step 4: Sprinkle the shredded mozzarella cheese over the top of the beans. Then, evenly distribute the remaining mini pepperoni over the cheese.
  5. Step 5: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbling.
  6. Step 6: Once out of the oven, let your Pepperoni Pizza Baked Beans cool for a few minutes. Garnish with finely minced fresh parsley before serving.
