Instructions:
- Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C).
- Step 2: Prepare the Baking Dish. Grease your baking dish with 1-2 teaspoons of butter. Sprinkle 1 teaspoon of sugar over the buttered surface.
- Step 3: Whisk the Ingredients. In a mixing bowl, whisk together the 2 eggs and 1/3 cup of light brown sugar until well combined and slightly frothy. Add the seeds from 1/2 a vanilla bean (or 1 teaspoon of vanilla extract) and mix well.
- Step 4: Add the Wet Ingredients. Pour in the 3/4 cup of half and half and add a pinch of salt. Continue whisking until the mixture is smooth.
- Step 5: Incorporate the Dry Ingredients. Sift in the 3 tablespoons of all-purpose flour into the wet mixture. Gently fold until just combined.
- Step 6: Prepare the Fruit. Slice the large pear (or two small pears) into thin wedges. If using fresh blueberries, rinse and drain them. If using frozen blueberries, keep them frozen.
- Step 7: Assemble the Clafoutis. Arrange the pear slices evenly in the prepared baking dish. Scatter the blueberries on top, then pour the batter over the fruit.
- Step 8: Bake. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until puffed and golden brown.
- Step 9: Cool and Serve. Once baked, remove from the oven and let it cool for about 10 minutes. Serve warm or at room temperature.
Notes
- Ensure your eggs are at room temperature for a smoother batter.
- Dust the baking dish with sugar for a caramelized crust.
- Experiment with spices like cinnamon for added flavor.
- Add melted butter to the batter for richness.
