  • 2 large eggs
  • 1/3 cup light brown sugar
  • 1/2 vanilla bean seeds or 1 teaspoon of vanilla extract
  • 3/4 cup half and half
  • 1 pinch salt
  • 3 tablespoons all-purpose flour
  • 1 large pear or 2 small pears
  • 1/4 cup fresh or frozen blueberries do not thaw if frozen

Method
 

Instructions:
  1. Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C).
  2. Step 2: Prepare the Baking Dish. Grease your baking dish with 1-2 teaspoons of butter. Sprinkle 1 teaspoon of sugar over the buttered surface.
  3. Step 3: Whisk the Ingredients. In a mixing bowl, whisk together the 2 eggs and 1/3 cup of light brown sugar until well combined and slightly frothy. Add the seeds from 1/2 a vanilla bean (or 1 teaspoon of vanilla extract) and mix well.
  4. Step 4: Add the Wet Ingredients. Pour in the 3/4 cup of half and half and add a pinch of salt. Continue whisking until the mixture is smooth.
  5. Step 5: Incorporate the Dry Ingredients. Sift in the 3 tablespoons of all-purpose flour into the wet mixture. Gently fold until just combined.
  6. Step 6: Prepare the Fruit. Slice the large pear (or two small pears) into thin wedges. If using fresh blueberries, rinse and drain them. If using frozen blueberries, keep them frozen.
  7. Step 7: Assemble the Clafoutis. Arrange the pear slices evenly in the prepared baking dish. Scatter the blueberries on top, then pour the batter over the fruit.
  8. Step 8: Bake. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until puffed and golden brown.
  9. Step 9: Cool and Serve. Once baked, remove from the oven and let it cool for about 10 minutes. Serve warm or at room temperature.
