Method for Peanut Chicken Wraps
- Step 1: Prepare the Peanut Sauce. In a mixing bowl, combine the natural peanut butter, low sodium soy sauce, rice vinegar, brown sugar, chili garlic sauce, lime juice, garlic, and ginger. Stir until well combined. If the mixture is too thick, gradually add warm water, one tablespoon at a time, until you reach your desired consistency.
- Step 2: Prepare the Vegetables. While you’re mixing the sauce, peel and grate the carrots, shred the purple cabbage, and slice the red bell pepper. Make sure everything is ready to go, as assembly is the next step!
- Step 3: Assemble the Wraps. Lay a tortilla flat on a clean surface. Spoon a generous amount of the peanut sauce in the center, followed by a handful of shredded chicken, grated carrots, shredded cabbage, baby spinach, and sliced bell pepper. Drizzle a little more peanut sauce over the top for extra flavor.
- Step 4: Roll It Up. Fold the sides of the tortilla inward, then roll it tightly from the bottom up to enclose the filling. Repeat this process for the remaining tortillas.
- Step 5: Slice and Serve. Once all the wraps are assembled, slice each wrap in half diagonally for easy eating. Serve with any remaining peanut sauce on the side for dipping, and enjoy your Peanut Chicken Wraps!
