Ingredients

For the Base:
  • 6 tablespoons unsalted butter softened
  • 1 cup all-purpose flour
  • 1 cup light brown sugar packed
  • 3 cups miniature marshmallows
For the Topping:
  • 1 heaping cup creamy peanut butter
  • 1 cup light corn syrup
  • 4 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup peanuts roasted salted
  • 1 cup Rice Krispies

Equipment

  • Mixing bowls
  • 9x13-inch baking dish
  • Spatula
  • Measuring cups and spoons
  • Microwave-safe bowl

Method

Stepwise Method:
  1. Step 1: Prepare the Baking Dish. Start by preheating your oven to 350°F (175°C). Grease your 9x13-inch baking dish or line it with parchment paper for easy removal.
  2. Step 2: Make the Base. In a large mixing bowl, cream together the softened unsalted butter, light brown sugar, and all-purpose flour until smooth. Once combined, fold in the miniature marshmallows until evenly distributed.
  3. Step 3: Bake the Base. Spread the mixture into the prepared baking dish, pressing it down firmly. Bake for about 12-15 minutes or until it’s just golden and the marshmallows have softened. Remove from the oven and let it cool slightly.
  4. Step 4: Prepare the Topping. In a microwave-safe bowl, combine the creamy peanut butter, light corn syrup, and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Stir in the vanilla extract.
  5. Step 5: Add Crunch. Once the peanut butter mixture is smooth, fold in the roasted salted peanuts and Rice Krispies until well-coated.
  6. Step 6: Assemble the Bars. Pour the peanut butter topping over the baked base, spreading it evenly with a spatula. Make sure the toppings cover the entire surface for an even distribution of flavors.
  7. Step 7: Chill and Slice. Allow the bars to cool at room temperature, then refrigerate for at least 1 hour or until set. Once firm, slice them into squares or bars.

Notes

  • For a different nutty flavor, swap out peanuts for almonds or cashews.
  • Use crunchy peanut butter instead of creamy for added texture.
  • Cut the bars into squares and freeze them for up to 3 months.
