Stepwise Method:
- Step 1: Prepare the Baking Dish. Start by preheating your oven to 350°F (175°C). Grease your 9x13-inch baking dish or line it with parchment paper for easy removal.
- Step 2: Make the Base. In a large mixing bowl, cream together the softened unsalted butter, light brown sugar, and all-purpose flour until smooth. Once combined, fold in the miniature marshmallows until evenly distributed.
- Step 3: Bake the Base. Spread the mixture into the prepared baking dish, pressing it down firmly. Bake for about 12-15 minutes or until it’s just golden and the marshmallows have softened. Remove from the oven and let it cool slightly.
- Step 4: Prepare the Topping. In a microwave-safe bowl, combine the creamy peanut butter, light corn syrup, and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Stir in the vanilla extract.
- Step 5: Add Crunch. Once the peanut butter mixture is smooth, fold in the roasted salted peanuts and Rice Krispies until well-coated.
- Step 6: Assemble the Bars. Pour the peanut butter topping over the baked base, spreading it evenly with a spatula. Make sure the toppings cover the entire surface for an even distribution of flavors.
- Step 7: Chill and Slice. Allow the bars to cool at room temperature, then refrigerate for at least 1 hour or until set. Once firm, slice them into squares or bars.
Notes
- For a different nutty flavor, swap out peanuts for almonds or cashews.
- Use crunchy peanut butter instead of creamy for added texture.
- Cut the bars into squares and freeze them for up to 3 months.
