Ingredients

For the Filling:
  • 3/4 cup chunky or creamy peanut butter
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
For the Chocolate Coating:
  • 16 ounces chocolate Candiquik or Almond Bark
For Topping:
  • 1/2 cup finely chopped peanuts

Equipment

  • Mixing Bowl
  • Spatula
  • 9x9 inch baking pan
  • Microwave-safe bowl
  • Knife or pizza cutter

Method

Stepwise Method:
  1. Start by greasing your 9x9-inch baking pan with a little butter or line it with parchment paper for easy removal later.
  2. In a mixing bowl, combine the 3/4 cup creamy peanut butter, 2 tablespoons melted butter, 1 teaspoon vanilla extract, and 1 cup powdered sugar. Mix well until the ingredients are fully combined and smooth.
  3. Spread the peanut butter mixture evenly into the prepared baking pan. Use a spatula to smooth it out so it’s evenly distributed.
  4. In a microwave-safe bowl, melt the 16 ounces of chocolate Candiquik or Almond Bark according to package instructions, stirring until completely smooth.
  5. Once the chocolate is melted, pour it over the peanut butter layer. Use a spatula to spread it evenly across the top.
  6. Sprinkle the 1/2 cup finely chopped peanuts over the melted chocolate for added texture and crunch.
  7. Place the pan in the refrigerator for about 1-2 hours or until the chocolate is set and firm.
  8. Once set, remove from the fridge and lift the bars out of the pan using the parchment paper (if used). Cut into squares and enjoy your Peanut Butter Mountain Bars!
