Ingredients
  

  • 1/4 cup oats for added texture and nutrition
  • 1/2 cup natural unsweetened peanut butter the star of the show!
  • 1/4 cup honey (or 3 tablespoons for a less sweet flavor)
  • 1/2 teaspoon vanilla extract for a hint of warmth
  • a pinch salt to enhance the flavors (skip if using salted peanut butter)
  • 2-3 tablespoons dried shredded coconut for a delightful finish

Method
 

  1. In a mixing bowl, combine the oats, peanut butter, honey, vanilla extract, and a pinch of salt if needed. Mix well until all ingredients are fully incorporated and a sticky dough forms.
  2. Using a spoon or your hands, scoop out a small amount of the mixture and roll it into a ball about the size of a tablespoon. Repeat this process until all the mixture is used.
  3. Once all the truffles are rolled, take the dried shredded coconut and place it on a plate. Roll each truffle in the coconut to coat them evenly, adding a delightful texture.
  4. Place the coated truffles on a baking sheet or plate and refrigerate for at least 30 minutes to allow them to firm up.
  5. After the chilling time, your Peanut Butter Honey Truffles are ready to be enjoyed! Serve them as a snack or dessert, and watch them disappear.
