Ingredients
  

For the Granola:
  • 1/3 cup creamy peanut butter adds richness and flavor.
  • 1/3 cup honey a natural sweetener that binds the granola together.
  • 3 tablespoons melted coconut oil promotes crunchiness and adds healthy fat.
  • 1-1/2 teaspoons vanilla extract enhances the overall flavor.
  • 1/4 teaspoon salt balances sweetness.
  • 1/2 teaspoon ground cinnamon (optional) for a warm spice note.
  • 3 cups old-fashioned oats the base of our granola; do not use quick or steel-cut oats.
  • 1/2 cup toasted coconut flakes adds texture and a tropical flavor.
  • 1/2 cup chocolate chips for that sweet indulgence; use milk, semi-sweet, or dark.

Method
 

Instructions:
  1. Step 1: Preheat Your Oven - Start by preheating your oven to 350°F (175°C). This ensures that your granola will bake evenly and become nice and crunchy.
  2. Step 2: Prepare Baking Sheet - Line a baking sheet with parchment paper. This will help prevent the granola from sticking and make cleanup a breeze.
  3. Step 3: Mix Wet Ingredients - In a mixing bowl, combine the creamy peanut butter, honey, melted coconut oil, vanilla extract, salt, and ground cinnamon (if using). Stir until the mixture is smooth and well-combined.
  4. Step 4: Add Oats and Coconut - Add old-fashioned oats and toasted coconut flakes to the wet mixture. Use a rubber spatula to fold everything together until the oats are fully coated.
  5. Step 5: Spread on Baking Sheet - Transfer the granola mixture to the prepared baking sheet. Spread it out evenly, pressing it down gently to help it clump together.
  6. Step 6: Bake - Bake in the preheated oven for 20-25 minutes, stirring halfway through. Keep an eye on it towards the end; you want it golden brown but not burnt.
  7. Step 7: Add Chocolate Chips - Once the granola is out of the oven, let it cool for about 10 minutes. Then, sprinkle the chocolate chips over the warm granola and gently fold them in. The heat will melt them slightly, making it even more delicious!
  8. Step 8: Cool Completely - Allow the granola to cool completely on the baking sheet. It will continue to harden as it cools.
