  • 2 cups crispy rice cereal adds crunch
  • 1 cup raisins roughly chopped if large
  • 1 cup semi-sweet chocolate chips roughly chopped or use mini chips

Method
 

  1. Step 1: Prepare your baking pan. Line your 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. Step 2: Combine wet ingredients. In a large mixing bowl, combine the light corn syrup, creamy peanut butter, light brown sugar, vanilla extract, and cinnamon. Stir until well-mixed and smooth.
  3. Step 3: Add dry ingredients. To the wet mixture, add the quick-cook oats, crispy rice cereal, raisins, and chopped chocolate chips. Stir until all ingredients are evenly combined.
  4. Step 4: Press into the pan. Spread the mixture into the prepared baking pan. Use a spatula to firmly press it down into an even layer.
  5. Step 5: Chill. Place the pan in the refrigerator for at least two hours to allow the bars to set.
  6. Step 6: Slice and serve. Once set, lift the bars out of the pan using the parchment paper. Place on a cutting board and slice into squares or rectangles.

Notes

  • Store in an airtight container at room temperature for up to one week.
  • For longer storage, refrigerate for up to two weeks.
  • Microwave for 10-15 seconds before serving for a warm treat.
