Ingredients
  

For the Dip:
  • 1 can small white beans or cannellini beans drained and rinsed
  • 1 cup baby spinach packed
  • ½ cup Parmesan cheese grated
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For Serving:
  • Crackers, chips, or vegetables your choice for dipping

Method
 

Preparation Steps:
  1. Gather all your ingredients. Drain and rinse the white beans, and ensure your spinach is clean and packed.
  2. In a food processor, combine the drained white beans, packed spinach, grated Parmesan cheese, lemon juice, and olive oil. Season with salt and pepper.
  3. Blend the mixture until it’s smooth and creamy. If the dip is too thick, add a little of the reserved bean liquid to reach your desired consistency.
  4. Taste your dip and adjust the seasoning if necessary. You may want to add more lemon juice for brightness or more salt for flavor.
  5. Transfer the dip to a serving bowl, sprinkle with additional Parmesan cheese if desired, and serve with your choice of crackers, chips, or fresh vegetables. Enjoy!
