  • 1 pound cauliflower cut into large florets
  • 2 tablespoons olive oil
  • 2 tablespoons ranch seasoning mix
  • 2 tablespoons Parmesan cheese finely grated
  • 1 large avocado cubed
  • 1 pinch sea salt
For the Homemade Ranch Seasoning Mix:
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3/4 teaspoon salt
  • 1/3 teaspoon pepper

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven is key to getting that crispy texture on your cauliflower.
  2. Step 2: In a small bowl, combine the dried parsley, dried dill, garlic powder, onion powder, salt, and pepper to make the ranch seasoning mix.
  3. Step 3: In a large mixing bowl, toss the cauliflower florets with olive oil until well-coated. Then, sprinkle the ranch seasoning mix over the cauliflower and toss again.
  4. Step 4: Sprinkle the finely grated Parmesan cheese over the seasoned cauliflower and toss gently.
  5. Step 5: Spread the seasoned cauliflower evenly on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
  6. Step 6: While the cauliflower is roasting, cube the avocado and sprinkle with a pinch of sea salt.
  7. Step 7: Once the cauliflower is done, transfer it to a serving dish, top with cubed avocado, and serve warm.

Notes

  • Store leftovers in an airtight container for up to 3 days.
