For the Fries:
  • 2 pounds fingerling potatoes washed
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 teaspoon salt divided
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 10 turns McCormick Italian Blend Herb Grinder
  • 3/4 cup freshly finely grated Parmesan cheese divided
  • 1/4 cup finely chopped fresh parsley

Method
 

Directions:
  1. Step 1: Preheat the Oven - Begin by preheating your oven to 425°F (220°C). A hot oven is essential for achieving crispy fries.
  2. Step 2: Prepare the Potatoes - Wash the fingerling potatoes thoroughly and pat them dry with a kitchen towel. You can leave them whole or slice them in half lengthwise for more surface area to get crispy.
  3. Step 3: Season the Potatoes - In a large bowl, combine the olive oil, melted butter, 1/2 teaspoon of salt, garlic powder, pepper, and Italian herb blend. Toss the fingerling potatoes in the mixture until they’re well coated.
  4. Step 4: Add the Parmesan - Sprinkle 1/2 cup of the freshly grated Parmesan cheese over the seasoned potatoes and toss lightly to combine, ensuring every fry is coated in cheesy goodness.
  5. Step 5: Arrange on Baking Sheet - Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned potatoes in a single layer on the sheet, making sure they’re not overcrowded.
  6. Step 6: Bake the Fries - Roast the potatoes in the preheated oven for about 25-30 minutes, flipping them halfway through for even cooking. Keep an eye on them until they turn golden brown and crispy.
  7. Step 7: Add Final Touches - Once the fries are done baking, remove them from the oven and immediately sprinkle the remaining 1/4 cup of Parmesan cheese on top. Return them to the oven for an additional 5 minutes to melt the cheese.
