Orange Scallion Chicken with Spinach and Couscous

Ingredients
  

For the Dish:
  • 1 10-ounce box couscous
  • ½ cup golden raisins
  • 24 ounces boneless, skinless chicken breasts
  • 1 cup Italian breadcrumbs
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 2 medium oranges
  • 2 tablespoons soy sauce
  • ½ cup chopped green onions
  • 9 ounces fresh spinach

Equipment

  • Large skillet
  • Medium saucepan
  • Citrus juicer
  • Cutting board and knife

Method
 

Cooking Instructions:
  1. Start by cooking the couscous according to the package instructions. Generally, this involves bringing water to a boil, adding the couscous and golden raisins, and letting it sit covered for about 5 minutes. Fluff with a fork once it’s done.
  2. While the couscous cooks, prepare your chicken. In a bowl, mix the juice of one orange, soy sauce, and minced garlic. Add the chicken breasts and let them marinate for at least 15 minutes.
  3. Once marinated, remove the chicken from the bowl and let any excess marinade drip off. Dredge each breast in Italian breadcrumbs.
  4. Heat olive oil in a large skillet over medium heat. Add the breaded chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through.
  5. In the same skillet, after removing the chicken, add the fresh spinach and chopped green onions. Sauté for 2-3 minutes until the spinach wilts down.
  6. Once everything is cooked, it’s time to plate. Start with a bed of couscous, top it with the sautéed spinach and green onions, and finally place the crispy chicken on top. Drizzle some additional orange juice over the top.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • This dish can be frozen; just separate the chicken and couscous.
  • Add seasonal vegetables for variety!
