Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C) and grease your 9-inch round cake pans with olive oil or non-stick spray.
  2. Step 2: In a large mixing bowl, combine the sour cream (or yogurt), olive oil, sugar, and eggs. Beat with an electric mixer on medium speed until the mixture is smooth and creamy.
  3. Step 3: Stir in the orange zest, orange juice, and orange extract until well incorporated.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Step 5: Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Step 6: Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Step 7: Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a cooling rack to cool completely.
