In your large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the bite-sized chicken pieces, season with 1/2 teaspoon of salt and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set it aside.
In the same pot, add the remaining tablespoon of olive oil. Toss in the diced onion and sauté for about 3 minutes until it becomes translucent. Next, add the minced garlic and cook for an additional 30 seconds until fragrant.
Stir in the white rice, paprika, and oregano, mixing well to coat the rice with the oil and aromatics. Then, pour in the chicken broth and bring the mixture to a gentle boil.
Once boiling, reduce the heat to low and return the cooked chicken to the pot. Add the broccoli florets on top, cover the pot, and let everything simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
